Actually it's a 85 foot climb and a 120 foot drop, because it's on a ravine.

When the ride goes 90 degrees, does the force work to hold the riders in their seats or is it all down to the restraints?

it's the force exerted into the riders, when the force is more than 1g you are being pushed down into your seat.

The force does it. The restraints are there just in case, and probably for legal issues.
