i've scored from my own half several times, all you have to do is go to team management and go to tactics and get the goalkeeper to take corners etc and then he has to run all the way back to his net meanwhile you have to shoot before he gets in his area or else he'll save it!

In a match u cant change the difficulty on the demo because it is set as semi-pro, but when ur just in the arena on your own u cant change the difficulty.
