Slip stitching the first stitch gives you a firmer edge. Try it with a test square - knit half way without and the rest slipping the first stitch. You will see quite a difference.
I knitted the beige scarf last year and didn't keep a record of the needle size. Looking at the scarf, it was probably 15mm. The yarn was an inexpensive chunky acrylic. My philosophy is to just choose any yarn you like, try it with various knitting needle sizes until you get the effect you want and start knitting.
