  • My sister in law fries the tortilla strips with oil in a pan and then she adds eggs once the tortillas are nicely fried. She scrambles the eggs in and then adds salsa de pato ( the red sauce from the can ) and she adds queso de cotija or whatever...that salty white mexican cheese. =] Very simple but yummy.

  • I use unsalted tortilla chips or strips, to save a couple of steps. another variation would be to add shredded chicken and/or scrambled eggs.. yummm!!

  • So you do agree that everyone has their own version, and whats up with the name callin. Not very mature....and I didnt speak, I typed. I tell you what, why dont you make a video on how to make the "chilaquiles" and then you can put your stamp on it. I wouldn't want to miss that, hell I may even subsribe. Cant wait!!!

  • some traditional versions do have eggs, our families version does have eggs, we also dont use cheese, and barely fry they with garlic, so they are still kind of soft with crisp edges, then the egg is scrambled, and we eat it with a salsa picante, im wondering if anyone else makes their's like this, my family is from san luis potosi

  • this are real mexican chilaquiles verdes.

    My abuelita use to add some pollo desmenusado, my mother and wife make chilaquiles like this, the only diference is the sauce, they use home made salsa verde :D
