I suspect that Skyfire wants to be like Google, keep the user interface as simple as possible.
That way it is easy to understand, fast loading and gets to one's home page ASAP. I notice that that is what Skyfire appears to do, allow one to set up their home page that has the "tabbed browsing" that Firefox and Internet Explorer have.
When I saw your demo within the first minute I could understand how to set it up and use it. That means the Skyfire UI is doing what it is supposed to do.
To be honest, I use Skyfire all the time on non-touchscreen devices as they do the best in emulating the feeling of a touchable interface with a D-Pad... however, on touch screen interfaces, I've grown more towards Opera Mobile. I suspect the zoom slider will put an even greater lean towards Opera at this point.
The iPhone doesn't have a browser that supports full Flash. There are plans to bring full Flash 10 supports to Windows Mobile, Symbian and Android. No word yet on Mac OS mobile and Blackberry.

@SlyMaelstrom I use the zoom slider on my HTC TP2 All the time running several applications - very handy to have off the side of the screen!

Yes, today adobe has introduced flash 10 for mobile, but iphone is not included yet!
