I think Ella have the tendency to bring out the best of her male costar, no matter who it is. With a quiet and reserved Jerry, Ella brought him out of his shell, and thus, he can't help but be bright and happy around her. I don't really see Jerry with this kind of interaction or chemistry with his other female costar.

I think the reason why they hold hands so much is because they are shy. Mostly Jerry, and having Ella there helps him get through interviews.

But, on the other hand(no pone intended) it would be nice if they hold hands because they really like touching each other. They would make a nice couple. I love how they look at each other when they speak to each other and other people. So much love and respect.
