I think a mixed green salad would work just fine as a substitite, something with butterhead lettuce and a little arugula...maybe some fresh basil. You might try some baby beet greens, too.

And the cost of this meal is fairly inexpensive. I generally have most of these ingredients on hand anyhow (eggs, olive oil, etc.). The items I buy specifically are the spinach, fennel and salmon. All three of these items can be had for approx. $10-$12, with plenty of fennel and spinach left over for several more dishes. And that's serving two people--all in all, a pretty healthy investment.
yeah...the egg industry has a bit of yolk on it's face right now. I buy the hormone free, free range, vegetarian fed chicken eggs. They are ridiculously expensive compared to "regular" eggs (and who knows if there's any real difference in the quality)....but, for sure, the way we produce "cheap" food as a society has a hidden cost.
it's a fancier plate than I usually prepare for breakfast, but the payoff makes it worthwhile...and If you go with the boiled egg option and prepare them ahead of time, this dish goes together lickety-split.
vinegar helps hold the egg white together as it poaches. Poached or boiled eggs are best for this recipe because they allow the clean taste of the salad and salmon to shine through. An egg fried in oil is a bit clunky for this recipe --that would make it a redneck version.
