I just did the Murray Marathon in australia which is a 5 day 404km canoe marathon and I did it in a TC2.
There is a few things i disagree on, I'm a back paddler for our TC2 and I call the change, as the back person is in charge of steering the boat. You shouldn't have to do a "turn stoke" which i know as a draw stroke unless you need to turn the canoe sharply.
This instruction video isn't very good for any sought of serious canoeing.
Actually this is pretty good advice for beginners, and yes you do switch hands. this isn't a kayak it's a canoe, it's wider. if you don't switch hands you can hurt your shoulder.

you switch too often. Keep in mind that your boat moves forward only when you your paddles in the water and are doing a stroke.
A very poor paddling video unless you are just learning to paddle and efficient strokes are not your main concern.
