I was under the impression that it is pretty standard procedure to do this. My dad used to be head chef at various high class restaurant/hotels and on the rare occasion that we have lobster at home he always dispatches them in this way before boiling.

The boiling water will kill them yes, but a sharp knife directly through the brain is going to be a much faster and less painful death.
