They explained all that at the end of season 6. As part of a deal with "death" Sabrina agreed to lose her own soul mate to bring back Hilda to life--so Josh decided to go onto his job in Prague, Harvey confessed his feelings for Sabrina and then left as well (so Sabrina turned into a statue and fell to pieces the way Hilda did). Zelda traded her adult years to bring back Sabrina to life.
