I think that way is better but I do not shave my own bonito flakes.

Many dried bonito （shavings） or dried bonito fish (flake) are always sold in supermarkets in Japan.

@marronrecipe Thanks for the answer! Right. I just thought that your bonito flakes look bigger than they usually are, so I thought you must make them by hand. Maybe you just buy a better brand of bonito flakes than most =)
