@Swiftygleek I've found that when you are mixing sugar, it doesn't matter too much what type of sugar, but caster sugar just mixes easier. The end result should be the same regardless of what sugar you use.

@XlSilverTonguelX It's not important. You can make 50/50 as well. :) I personally put all the sugar with the yolks and only a pinch of salt to the whites when I beat them. This way my cream for tiramisù results more like a mousse and I love it like that.
