Onions weren't really caramelised at all... It should take about 45 minutes before you put the stock in.

do we need the wine to make this dish ? is there something else we can use?

@sweetums420 - You don't have to use the wine - just substitute with more beef broth or water and it will be fine.

in bulgaria we have a similar soup of onions. we add chicken pieces and bay leaf and black pepper powder. we call our onion soup yachnia.
