You're right, you can go very low provided your knees are ok. But no point doing 3-rep sets, unless you're working only on your strength. However if you are, I would go for 5 reps. Legs respond better to higher reps, both for mass and for strength. It's much more difficult to do 12-16 reps with 100kg than 5 reps with 150kg
