Quite true. Again, this is most likely a cultural issue whereas the Japanese would prefer the innards (liver) moreso than the fillet of the anglerfish/monkfish - but the western countries would want to consume the meat of the same fish and use the innards for stock: Or if some kitchens were really careless: Simply discard those tasty organs. Interesting how the taste/consistency of the fillet of anglerfish/monkfish is said to be the poor man's lobster; And the liver is the poor man's foie gras!
