You've got to fry fries twice - the first to cook them, the second to crisp them.

@MorroccoSurrogate I'll have to try that. My recipe did not call for that. Why can't you just cook them continuously?

@AgileHProductions If you fry them at a low enough temperature that they cook all the way through, they'll be limp, and if you fry them at a high enough temperature that the outside crisps, the inside will still be raw. If you try to cook them all the way through at a temperature high enough to crisp them, they'll burn.

You should try with burgers... McDonald's burgers just get dry, they don't rot at all.
