It's not always about "improving" the song; frequently, those changes are made because a singer can't hit a certain note, and the modified one is easier for them. (Which is just one example, mind, and I agree with you on this one.)
In fact, Mozart liked that the singers could make some changes... my teacher told me that Mozart didnt like that they sang strictly what was written in the partiture, he was very spontaneous so he wanted the performers be the same.... Sorry for the bad english.... :P
@maikelektro That's not improving or improvising, just stilisticly correct. Only a normal appoggiatura, nothing else. Perfectly fine. Just take a look at the stilistic resources of that time; for example " Der Harmonische Gottesdienst" by Telemann where he wrote down what has been common musical knowledge of the time. The composers did not have the need to write the appoggiatura as every musician knew what to do.
@crazymezzo09 Perhaps the notes differ from an edition to the other. Julia Varady (also on YouTube) sings "geschrieben" with the same notes as Anja Strauss.

Yes, the same concept is applied to baroque songs. Decoration or subtle changes are quite acceptable, as long as they are done tastefully. :)
