it's cool to see the many diff ways to make Thai Fried Rice, my friend is from Thailand and he made (Khao Pad) for me the other day, it was so good! He used the same ingredients you used but he fried the dish in peanut oil instead of vegetable oil, he added in (nam pla) fish sauce, sugar & white onion. He didnt add the uncooked egg to rice like you did, i watched him pour soy sauce into the beaten egg and scramble them separately. Your dish looks so good, i can't wait to try your version,
It contains chicken but the main name of the dish is ข้าวผัด (khao pad). So really it's like calling a sandwich a sandwich without mentioning the filling, which is pretty common throughout western culture and society.
It's casual and common practice of thai, they have a lot of it.
with your accent, i think you are living in california or particurlarly in los angeles. becuase lot of people here, they always looks like asking a question.
If you have an asian grocery store near you, it should be possible to go in and ask for "Black soy sauce" it's really not expensive but i've only seen it at asian food stores.
I start to make thai dishes myself now, Im a westerner living in Thailand so I have all the ingedients I need ;)

use veggie oil, or corn oil--they are best for this recipe...but never olive oil--it will interfere with the taste.
