It's not like A.B. is a chef, he's never run a kitchen, restaurant, or earned any acclaim by his cooking skills. He's an entertainer/food tourist at best.

@viewitnow I don't know if he's run a kitchen, but in order to prepare for the show he spent a few years getting a degree at the New England Culinary Institute, and then worked as a chef in a restaurant for an additional two years before filming Good Eats. His original plan was to produce the show and hire a real comedian to host; he only does it because he had no budget in the pilot to hire somebody else. He's a showbiz guy first, but that's not all -- he's done his homework pretty well.
