I can't get a roast with the skin attached like you all can. Of course I live in Michigan. Michigan sucks! We can't have the good Everclear, good fireworks, our cigarettes are outrageous, etc. The lesson: don't live in a "blue state"!

What does scoring the non-skin side do? Is it to just get the rub deeper in the meat?
