I could never know how to pick up a cat because, they hate me, run away from people (even owners), and I don't own a cat since some family members are allergic :(

You should probably learn how to hold the cat next. A reasonably tame cat won't object being held like a baby or a ragdoll but for the cats sake:

You want the cat to think it has as much control as possible.

The main thing is to make sure the base all four of it's paws are on something. eg back paws on your left fore arm, front paws on your left bicep. Then your right arm can be used to stop it jumping out.
