There are chemical that strengthen the gluten in bread available in bakery supply in Asia. Also to make sponge cake just beat eggs and flour and the rest of ingredients at one time for 5 minutes but you need to add emulsifier agent into this mixture also available at asian bakery supply.

how can they make it look so perfect? whenever i bake bread its misshaped, miscolored, and either burned or under cooked/baked.... :/
