@PasTropFancy Thanks for your feedback PasTropFancy! The guidelines for the competition said neither that it had to be my personal kitchen nor a my own original recipe. The Lobster I presented is not a dish served at the restaurant I /work/ for and was in fact purchased earlier by me.
I did not want a chiffonade which would have been pointless as the basil wasn't being cut for presentation, but merely for flavour.
I usually make about 2 litres of tomato sauce every week for personal use.
Really fun presentation! Keeping the head and tail ends of the lobster really gave it a good effect. I'd eat it up if only the computer screen wasn't in the way. :3

You need training on chiffonade, cutting basil like this is a crime.
How much tomato sauce do you cook everyday in YOUR KITCHEN???
