I made this Almond Roca and gave it as gifts it was a hit i also had people asking me to make more i made a total of 12 times for christmas and im going to make another batch now thanks for the great receipe it was a hit.
@Subparanon--what kind of thermometer did you use? It sounds like your candy was browning the way it should be, but the thermometer was going "nuts!" The temp on my stove is the same as yours. I just made this candy 2 weeks ago using the same therm., pot and ingredients. Did you use SALTED butter; it does make a difference too! A few folks have made the candy without the thermometer, going just by color. For me, I like to ensure it turns out the same all the time so I always use my thermometer.
Tried this and my temp shot up very quickly, yours was already browning at 250, mine was still white and boiling angrily at 280. I kept turning down the heat and down and down and it still ended up at 305f before browning really started. I couldn't keep it long because it kept getting hotter and so it wasn't as brown as I would have liked by the time it reached hard crack temp. What am I doing wrong? High on my stove is 12, med is 6. I had it at 7.5 then 6 at the end.
