It's cool that Yoshi starts on top of the castle, just where you find him in the original game. It feels like he was waiting for Mario there, but in this version of the story Mario failed, so Yoshi had to go rescue him.

Spoilers there are 121 stars in super Mario galaxy. Get 120 stars as Mario and then beat the final boss to unlock Luigi. Then get 120 stars as Luigi and then beat the final boss to unlock the grand finally galaxy. If you beat it you get the 121 star.
