If you care about simulating real world, just put the sim in the most realistic settings, not the recommended realistic settings though, and read what real pilots do. Then repeat it over and over and over until you begin to work almost on autopilot. My concern is when I start working on my Pilots License is instead of grabbing the flap lever I'll be looking for F5-F8 through shear muscle memory.
You should consider getting FRAPS to capture your ingame stuff vs a camera. Now about your landing... hm. I'm no real pilot but I've been with flight simulator since the days of Windows 95. So at least in FS I've gotten the hang of touching the ground at what seems like a smoother touch then yours. What I did throughout the years was read a lot of real world documents about flying. You begin to realize FS tries hard to simulate it and they work pretty well.
