Hey, Great Job! I've started making my own plum wine :D Im just filtering it now, but in the syphoning process I've noticed its quite sharp and bitter. Did I do something wrong? is there anything kind of syrups I can add to rectify this?
@pollymatication Depends. If it's just 'tart" as in 'not very sweet', then it could be a simple case of adding more sugar water, and allowing it another ferment. At some point the alcohol will reach 'critical mass' and the yeast will not be able to process any more of the sugar - if you add too much, the wine will be very sweet.
If it's "vinegary" its possible the batch could be 'off' -usually caused by a fruit fly falling in, or poor hygene, if so, afraid its only good for pouring away :o(

I don't know ANY good quality wine that can be purchased for that price! Try nearer the £15 a bottle mark. Does it match up to that stuff? I doubt it, you've only just bottled it for a start.

I did the whole 'wine snobbery' thing a decade ago, but after spending lots of time and lots of money sampling everything under the sun, I came to conclude that some of the most enjoyable wines I'd ever had were the ones I'd spent less than a tenner on.
I guess 'good wine' is just a matter of personal taste, but as far as I'm concerned, 'good wine' is measured in terms of how enjoyable it is, not how much it costs.
I made some Sloe Vodka two years ago and though it's a simpler process than wine making, it is sublime and has turned from a deep ruby red colour to that of a good single malt. Also made some Sloe Gin but for some reason that strips paint....
Rick, you are very talented: music, video, and now WINE. The bottles and labels look professional. This wine fits perfectly with your interest in survival awareness and preparedness. During a melt down of civilization, your wine would make a great item to barter with, it would probably make you rich in such a world where everybody was on their own. Your wine might even become the new local currency. Keep it coming. This is better than gold. You can't eat gold.
That is great stuff Rick. You should give away a bottle to some lucky subscriber. Alcohol has no effect on me, so I'd probably just have it with my Corn Flakes.
Seeing all that homebrew reminded me that my Grandad used to make homebrewed barley wine, when I was a kid. When he wasn't looking I drunk some.. BIG MISTAKE!.. seriously strong stuff. He used to tell me that he cleaned the drains with it, lol.

I attempted making wine nearly 20 years ago (in a combat zone of all places), and it was horriffic, nasty, with a few other words mixed in... we didn't add enough suger to the mix, which is why the taste was off. I would love to try your mixture to see how well it taste. I'm more of a Port drinker than Wine, but who knows.. I mine like something I made a lot better. where did you get the recipe?
Definitely worth a dabble. I got shown how to do it by my sister but its so easy, a 5 year old could do it. Google it and you'll find loads of basic instructions.
do the bottles need to be properly sealed when you bottle them, or is it okay to reuse old wine bottles and put the old caps back on?
