If you think that he doesn't have enough flesh mass to mutate that strangely, let alone that large, think about how many cells comprise our bodies. Cellular division mixed with a hydroponic solution (i.e. water) causes them to swell along with tissue conversion of the host, producing tentacles. As for the strange appearance of the monster itself, it probably fused with a crocodile underwater, exponentially fueling mutation.
