Looks real good. The only problem with using a rack is if you want to do a mop of cider or sauce during the cooking it becomes difficult. Also, I've found that dry chunks of hardwood do better than wet chips. Good lookin' Q though, thanks!

The large crystals coat the meat with more salt to draw out the fluids (kosher meat has to be blood free). Although many kosher salts are indeed kosher, it's not a prerequisite.

everytime i think the ribs is done, there's another process. than at the end when its finally time to eat, the ribs look burnt. wtf!

they aren't burnt. It's the smoke crust. (that's what I call it) if you do it right the ribs are juicy with a spiced crust.
