@AdamNinjaXXX in general they are not intended as lethal weapons, they are intended as more of a distraction. that's not to say a good hit from close range with a very heavy spike couldn't kill someone, but the chances are low.

Use pork meat u buy at the groceries with skin still on, I would think that would be a more accurate depiction of the human flesh. Plus u can use it for pork chops later.

If you want a good test surface for edge penetration, use thick leather. I like to use an old riding saddle.

the gel is also just supposed to be as firm as muscles and organs so if u had no skin and poked urself with the knife it would have a similar result as the gel. if u put some thin leather infront of the gel it would be a bit more representable

it's not supposed to be like real flesh. even real ballistic gel is not against a knife. the idea is that under the high velocity of a slug traveling through the air the gelatin has similar resistance properties as flesh. that has nothing to do with low velocity impact weapons.

skin adds a huge amount of strength, thats why the knives can penetrate much further, also the gel can't represent all the muscle fibres,
