use a flash light at night.. put the light under the egg when it is 5 to 7 days old..you should see veins forming in the egg at that time.. it means it is forming a baby pigeons.. that is called candling..
it is real hard..usually but not always the bigger youngster in the nest is the cock...the main thing is to watch them as they get older they will tell you who is who..
i am from minnesota and i am starting to raise pigeons not race but just breed possibly and train them to trap and free fly but what type of breed would be good to start with.
i can't right now, to many hawks around..:-)
