I agree that Greeks have some critical defections but I don't know whether someone who just visited tourist places is able to understand them. I don't think you are referring to these. I guess what you said was based on a negative experience you had with a tourism professional or something. I don't know what was your experience but no professional can represent Greeks as a whole and their approach on foreigners.
