I didn't always keep it still, if you'll notice the chaos during the word scroll. ;-) I used a tabletop tripod (with flexible cable-like legs) and sat it on the dashboard; it's okay if there are no fast speed changes or turns, in which case I have to steady the tripod with one hand (admittedly not the safest setup). It might be possible to rig something with velcro. I've also been meaning to experiment with a regular size tripod on the passenger-side floorboard with the seat all the way back.
What state was this filmed in? I thought I saw Kentucky license plates in several different parts of the video, but couldn't tell for sure. Regardless, cool time lapse vid!
