after watching several videos of marco explaining how to cook something, i get the feeling that he enjoys instructing. but then again, he's had to do a lot of instructing of up and coming chefs over the years at his restaurants, so maybe it's something he's gotten used to and now enjoys doing at a less stressful pace.

@Nidodafish I think he really pissed the Michelin institution off when he did that. Because he asserted, quite rightly, that as a world class chef/ restaurateur he did know more about his craft than the inspectors, and that he was constantly "playing a defending game" in order to keep his three stars. I think by rejecting the Michelin guide he was able to be free and do what he really wanted to do. I believe the Michelin guide is French biased, and forces chefs to stifle creativity. MPW rules!
