She's doing something a little strange, seasoning the oil rather than the fries directly. I've seen this done before, on a vegan cooking show, Christina Cooks. I'm not a fan of her show, but I think she used soy sauce right in the hot oil, or something like that.
By fear is that the oil is NOT re-usable for much after seasoning the oil itself. Of course, if you're gonna make this every day, then maybe you can just leave the oil in the pan.
And just 4 those... u never use a paper product 2 absorb grease. She got that kinda right. Paper absorbs and radiates moisture (soft paper). Should be a wire rack. But I would try them

You did them pretty much the same way America's Test Kitchen know does them. The ATK host said they found thsi method was ultimately the best. I tried their method and it makes the best fries there is. BTW I too have for years gone through all the BS of rinseing/soakin/chilling/blanching/cooling turning up the heat of the oil. No more of that BS for me thanks to ATK.
Hi there, thanks for the video, a trick is to put white fat/bakers shortening (about 2 spoonfuls) into the oil and fry the chips (preferably frozen/cold) in the oil/shortening. This allows for a nice light brown colour on the outside, with tender cooked French fries on the inside. Stay sweet
im sorry to day. but those were horrible french fried u made. if u want to make the best. u should put them in a bowl of ice cold water for at least 45min after slicing the potato. doing this u make the french fry light and fluffy in the inside like fast food fries. after u dry them of course. u blanch them in the oil by putting oil on 300 degrees for like 3min and then let them cool down for 20min. then fry them again on 375 degrees.
this makes the crispiest fries ever for u and the best

oh no prob i remember this post. lol looking at my post it seemed kinda harsh but i was just trying to help u make tastier fries. my aunt and uncle own a really successful diner before so they showed me how to make it and they use kennbec potatoes which are the by far the best ones to use for fries and mashed potatoes. but they are hard to get if u dont like in the northern states. the second follow up would be idaho patatoes but u can use yukon gold if u cant find other 2.
also the best oil to use is peanut. they have lowest smoking point so it keeps oil real hot and warm which makes the fries crispier and better taste. yep kennebec potato and peanut oil is the best combo.
