Those are awesome. There's a variety called Armenian Cucumbers that naturally grow three feet. Definitely get seeds of those. They're neat.

Cucumbers go from green to yellow and yellow is not what we want for optimum eating fruit. However, not all cucumbers get bitter. The main issue is big seeds and bitter skin. if you skin the cucumber and take the seeds out (like with squash) you may find the flesh is fine... or horrible.
