It's all about respect. Fighting is a natural part of the game. It's necessary. You can't go around slashing and beating up on a team's star player and expect to get away with it. Fighting is a way of neutralizing the unnecessary violence that occurs during a game.

Look at the crowd's reaction throughout each fight posted on youtube...you think they don't enjoy this stuff??
