Congratulation, Bravo, very, very beautiful orchard. even through the video I can feel their teste. If it yield like this in 2nd leaf what it will be in a couple of years?? Have you ever thinking about railroad construction to the orchard..

To get fruit you usually need two trees (non related varieties). A crab apple (these have very good pollen) that blossoms at the same time as Honeycrisp is probably a good option.
