@ 5:20, the vegetable you're talking about is called water spinach, traditionally vietnamese would use a water spinach splitter to tear it into strips of edible portions, looks great, and tastes much better. Also, the reason why "you can't go wrong" with spicy beef paste in enhancing the soups flavour is because it contains huge amount of msg unfortunately.
