Florida Cracker Horses were named that because the very first Cowboys in the US were the Spanish that brought the stock that evolved into this type of horse (which is especially suited to being in Florida's heat and wet swamps.) The Spaniards always used bullwhips to work their cattle along - which make a loud crack when whlpped - so they were "Crackers." Their horses - Cracker Horses.
