The translation of Sauerkraut is "choucroute" or "sürkrüt" in old language of Alsace area when they were german. After many wars the plate becoming french with the area!
We suppose by extension exist this Sauerkraut till the baltic area with additional ingredients.

This recipe is coming form north east France area: Alsace.
As vine with this plate we suggest you to take dry white vine kind "Riesling" from the same area.
