    Yogurt helps to make Dhokla spongy and soft. So not sure what you can use, lemon makes them hard, so can't use lemon. I will have to think about it.

    in India..or sometimes at Indian grocers in the foreign country. You might not be able to find same but you can find atleast something to steam your dhoklas and idlis

    I have never tried with lemon juice. I guess it turns out hard with lemon juice. Rather use soury yogurt to make them soft and fluffy...

    I told you I have never used lemon salt...just use fresh juice of lime or lemon..

    Made up the following recipe for 8 idles

    1/2 cup rice rava (rinsed twice)

    1/4 up urad dhal flour

    2 tablespoon yogurt

    Salt

    Citric acid

    Bi carb soda

    Eno

    Wasn't too bad at all, they turned out pretty well.

    You can use rice sooji in place of wheat sooji and omit rice flour. Hope this helps...enjoy!

    You can but texture of dhokla will be different. you can add as much khatta as you like. Citric acid is to get instant souryness and also helps to get better texture when used with Fruit salt(ENO) enjoy!

    I tried this dhokla recipe with the exact measurements of flours you mentioned and I must say they turned out to be very very nice. I added the chopped green chillies instead of paste and added little lemon juice as i was not having citric acid. the taste was very very nice and I will now make this this frequently as i am confident of attempting it foolproof. All thanks to you and I pass all the praises my husband showered on me for his favorite dhokla to you :) Cheers.

    Yes, this Dhoklas are so great that you want to eat them again and again. Specially if you make khatta(very soury), you crave to eat it all the time. Me and my yougner son never get tired of eating this Dhoklas. Enjoy!

    Honestly speaking, this is my original accent. I don't know what difference between indian and american and canadian...I had been to many countries so far and learned whatever came to me. It makes differecne probably when you work in outside world than staying at home....sorry but don't need to give more explanation since these has been discussed so far hundreds of times...so please put up with my accent. If I try to change it, it might look more horrible...

    I don't think she is trying to speak american accent. It naturally comes when you get your part of education in the US. And of course specially when you are working in the corporate world, accent changes automatically. Honestly speaking I get annoyed, when Manjula auti says, halfe cup instead of hald cup....sorry no offence but not everyone likes everything. So I think Bhavna is doing great job. I don't see anything wrong with her accent and her accents are very pleasant.

    It is basically one of the spices used often in indian cooking. You can leave it out if you can't find. It helps to digest food easily.
