its a spell called Transform worgens get at lvl 10, the spells stacks/works forever until the players type /Transform or use the spell. if you attack anything wile being a human the effects does go away.

The various animations and graphics seen throughout the game could be taken as "cheesy" from a realistic context, though it's obvious that such a stylistic game wouldn't be trying to do that. You are right in the fact that WoW's graphics have aged considerably; but what keeps the game looking so good after all these years are Blizzard's timeless artistic aesthetic, with minor technical tweaks and additions over time.
