hey this is one of the best phulkas I have ever seen being made! almost like an artist .. ! too good.. pls let me know the proportion of water and dough...my dough alwyas seems to taunt me for being wrong with the proportion .!!
At the beginning, keep the stove setting between medium and high. As the pan gets heated, reduce to medium heat. Since you have to do two things at a time - rolling out the chapatis as well as toasting them, I prefer to keep things on a lower setting so that things don't get burnt.
thanks for uploading her skills!... do u know by any chance what the setting was on the stove? i have an electric stove and i cant figure out what to set it on for best results.

She makes minimal use of oil. But the chapatis are very soft and fluffy.
