In this case, you are using Baking Soda (which is also a main ingredient in Baking Powder) and there is a souring agent (vinegar) in the recipe- which is a must to activate the Baking Soda. If there was no sour ingredient (yogurts, lime, vinegar) in the recipe, we'd have to use the Baking Powder.

@kelliferrr I tried this cake so many times with different ingredients. It came out great every time. Only thing you need to know what consistency you want. I really never used measured ingredients. I've actually used cinamon. It's a flavor too. You can try it. Cocoa is used to make it a chocolate one. It also has a great relation with Vinegar & Baking soda.

i have tried making eggless cakes before and using condensed milk helps keep the cake moist ! just a tip for ppl who like eggless cake and another thing u can do to have moist cake is brush the cake with sugar syrup, which consists of boiling water and adding sugar and stirring till the sugar is dissolved.

@CherrYKoki : Baking Soda is to give the cake the bounce and the spongy texture that we usually get from eggs and since this is an egg less cake, the baking soda helps :)

I want to let all of you know that I had to use Olive Oil since I couldn't find Canola Oil in Sri Lanka. I must say the cake came out very well, and every one including my husband loved it. I made this cake twice now & it was gone even before I could apply icing. Actually its good just as it is :) Just one small thing Hetal & Anuja, I used chilled Sodawater instead of Coldwater.. I don't know if it makes a big difference?
Thanks for the recipe. As someone mentioned, I noticed some eggless cake recipes use soda such as coke. Your thoughts on that ? I am worried about the excess sugar and the fact that its soda.
We have not tried using soda for cakes so cannot give you an accurate answer. If you are worried about sugar, you can always reduce the amount of sugar in the recipe and compensate it with the sugar in the soda.
I have a question, can I use the regular chocolate drink powder instead of cocoa powder to make the cake? I don't find the powder in my nearest grocery store and that limits me in making the make whenever I want.
Chocolate drinking powder is cocoa plus a few other thingswhereas Cocoa Powder is more intense. Having said that, you can substitute but the cake may not have that dark color and that intense chocolate flavor. Give it a shot, we don't think you have anything to loose!

This cake is awesome, it came out perfect in first try. I used lemon instead of vinegar.

Thanks for the recipe. As someone mentioned, I noticed some eggless cake recipes use soda such as coke. Your thoughts on that ? I am worried about the excess sugar and the fact that its soda.

We have not tried using soda for cakes so cannot give you an accurate answer. If you are worried about sugar, you can always reduce the amount of sugar in the recipe and compensate it with the sugar in the soda.

I would like to know what oil you use ? Can I use Olive oil ?

@kushlanimWe use Canola Oil for most
of our cooking and Olive Oil for Italian cooking.
In this case Canola. Olive Oil tends to have a
sharp taste that may take away from the taste of the cake.
Having said that, we personally have never tried it

Refrigerator is good as long as you consume it within 7-10 days.

this recipe is very nice indeed. it will be great if you add some cold soda water instead of just plain cold water. The cake becomes more fluffy :-)

I have a question, can I use the regular chocolate drink powder instead of cocoa powder to make the cake? I don't find the powder in my nearest grocery store and that limits me in making the make whenever I want.

Chocolate drinking powder is cocoa plus a few other thingswhereas Cocoa Powder is more intense. Having said that, you can substitute but the cake may not have that dark color and that intense chocolate flavor. Give it a shot, we don't think you have anything to loose!

Baking powder and baking soda are a little different. Baking powder has added ingredients that may alter the taste and texture of this cake.
