A string, when plucked, will vibrate. Pressing a string against a fret shortens the strings length, providing a higher note. It does not need to make physical contact with the fretboard to make sound. However, the fretboard DOES have an effect on the timbre of the sound. Even my nine year old knows this, and he learned it from 'Donald Duck in Math-Magic Land'.

the thing i love about al di meola is that he doesn't need any fancy equipment or anything to play that fast, he really is that good.
people like yngwie malmsteen kinda cheat by turning on different pickups so you don't hear the bad tone and use scalloped frets which makes it so much easier to play fast like he does. If al picked up a guitar randomly he could actually play this good.

A real fusion classic right here. Al Di Meola is one of the All Time fastest Guitar Players out there. And Elegant Gypsy was a landmark recording for him when it came out back in 1977.
