  • I liked this but I would have like if the had writing or something to break down the process. Ex-husband is Vietnamese and miss the cooking was looking for something in depth so that I can recreate some of the food for our kids.

  • Hmm a good Vietnamese friend of mine does it without cooking. I'm sure there are different ways, but is this a more comin way to make it?

    He just does fish sauce/water/ sugar into a blender. Then puts cilantro/ garlic/ chilis. Then Serves it like that.

  • @bdix69 There are several ways to make a fish sauce dip, so it's up to you to pick and choose. I want to make a whole lot of it at a time, keep it in the refrigerator, and boiling the fish sauce helps to keep it from going bad too quickly. I have never heard of putting cilantro in a fish sauce dip mixture though, but be creative, if you will.

  • @iRwaaar Fish sauce is the main ingredient in Vietnamese cooking and the fish sauce mixture is used for dipping at lunch and dinner for any steamed and pickled vegetables. You can also use the sauce mixture for any BBQ noodle dishes and salads.

  • @6262742 yeah. me too. except I like lemon better with buttery sauces and italian food. But I'm addicted to thai/vietnamese food so i'll just stalk up on limes.

  • @GreekVegetarianRecip You do need to boil everything together (medium heat) until it forms a little bubble over the surface, turn it off and let it cool before mixing it with lime juice and garlic mixture - boiling is good for the tummy and lasts longer in the fridge (a few weeks). Thanks.

  • Man! be a man and use that fish sauce straight like us Filipinos do, he he he...Actually, we mix straight fish sauce with citrus juice like lemon or lime or the "calamansi" which is a Filipino citrus fruit when we use it as a dipping sauce. We also use straight fish sauce as a salt subtitute and sprinkle little bit to food to make it saltier.

    Thanks for the video, been wanting to make a different version of the fish sauce dipping sauce. I always have it when I go to a Vietnamese restaurant.

  • You mean "Nuoc Tuong Cham" or Hoisin Sauce Dip for the Spring Rolls? This is a Chinese influenced dip, Vietnamese usually use Nuoc Mam Cham or Fish Sauce Dip. I tried the recipe for the Nuoc Tuong Cham in Nancie McDermott's book and it tasted pretty good. It's called Quick and Easy Vietnamese or perhaps you could find the recipe in other Vietnamese cooking sites and books. Good luck and thanks.

    You should use a better bigger knife next time. That knife is too small. I thought you were gonna cut your hand.

  • It's the only sharp and good knife I have around my kitchen, and I like it. I learned how to use a knife to cut veggies and things when I was about ten. I got lots of cuts then, but now I'm an old woman with more experience, I seldom get any cuts. Anyway the focus of this video is the Fish Sauce Dip and not about the knife. Thanks for your concern though.

  • I've never heard of that or seen how it was made. The smell of fish sauce when cook is kind of smelly to most foreigners, but to the Vietnamese it's quite opposite. On the other hand, to some Vietnamese cheese is really stinky. So it is something you grow up with or getting used to. Fish sauce is the main ingredient in Vietnamese cooking.

  • @6262742 But fish sauce is not smelly compared to Durian ! Which I discovered once at my Vietnamese friend's house... Vietnamese food is among the best in the world in my opinion. Thanks for the video .

  • Well, my brother in law (who is a German-American) thinks steer manure smells much better than boiling fish sauce because he used to live on a ranch. But to me it's the worse smell that I have ever encountered. So here we go again, some smell or food needs to be getting used to growing up with.   • Ginger sauce recipe: 1tbsp grated ginger, 1tbsp rice wine or dry sherry, 2tbsps light soy sauce, 1tsp brown sugar, 1tsp fish sauce, 1/2tsp corn starch, 2tbsps water, 1tbsp vegetable oil.

    Heat a small pot, add oil and fry ginger gently. Mix soy sauce, rice wine, fish sauce, sugar, corn starch and water together. Pour into pot, stir constantly for 2 minutes. Remove from heat, let cool. Use it as a dip for sea-food, steamed or boiled chicken or duck. Thanks for trying my fish sauce.
