  • I just ate some of this and it was pretty good. I made some changes though. Instead of cheese, I used cookies, and instead of broccoli soup, I used nothing.

    So yeah, I just ate some cookies out of a bag.

  • When you add oil to food somtimes it will leave your mouth all oily after you bite it. like fried chicken.. or if u saute somthing and the oil aint hot doesnt make the sizzlin sound when u drop it in.. WhY DID THE OIL WORK FOR THIS RECIPE??? i know olive oil is very good for you and is on the euro food pyramid! you can pretty much wear it and its good for skin.   • Actually there is scientific proof showing the relation of animal protein to cancer. Check out the book "The China Study" I stopped eating meat because I got cervical cancer, once I went vegetarian the cancer went away in 2 months, no meds or surgery or anything. I love to cook and eat meat once in a while but it is not necessary to eat every day. If you do eat it, make sure it is grass fed and organic.

    Agreed... there's not such a thing as "cruelty free food", unless you're eating rocks, you are always eating something that used to have life, whether if it was an animal or a plant.

  • i've tried blended soup as honestly think vegetable soup is nicer witht the vegetables not blended and whole. Far more tastier.

  • Have broccoli in the garden that is ready to harvest. Can't wait to try this recipe with one plant that is ripe, but not particularly "pretty."

  • @gussinajninen Chances are, you hate it because you've never tasted it properly cooked. Brocolli is incredibly easy to steam/boil (just like Ramsay showed), however, it's just as easy to screw it up - cook them for a minute or two more than required and you've got a dark green-ish rubbery piece of crap.

  • I can't imagine not adding any green onion or garlic...wow. But since it is Gordon's recipe, I trust that it is delicious so I'm going to make it just like this!!  Can't wait!

  • I just made this soup too. I had to use frozen brocolli florets and mozeralla cheese. Oh well, it's all I had. I'm no vegetarian, but I want to creatively include more vegetables in my diet. Wonderfully simple and delicious dish.

  • Delish! My hubby and I just made this at home! Who would have thought?! Broccoli and water!!! This has to be SOOOO healthy, too! Especially, when I know we don't get enough veggies in our diet. (We used just a smidge of crumbled Feta on top instead of the goat cheese, since that's what we had on hand. It really didn't even need it!)

  • it shouldn't if the broccoli is nice and fresh and you've seasoned the soup properly. Unless you don't have enough water or your puree isn't fine enough. If it's slightly rough or lumpy or if there isn't enough water then it doesn't carry the flavour properly and just tastes like mush. Now if it was cauliflower soup THEN maybe a bit of cream and white pepper ;)

  • Broccoli soup is good, but cauliflower soup is amazingly better, especially if a bit of cream is folded in.

  • what I like about Gordon's recipes that they are all very simple and you don't have to go to some speciality store to buy ingredients. he also is very precise in his instructions, does not waste words which you make you really focus and remember. love that!

  • I tried this recipe and it was very good. The broccoli has the most lovely deep green color after it is briefly cooked. I wanted a bit more complexity so I sweated a very small amount of onion and garlic and added it.

  • not exactly my cup of tea.. i'd like at least one other flavor in the soup, something to think over. chop and sautee some leeks, pop in when you blend, and add a spot of garlic, and this soup would be spot on for me.

    Humans do eat meat.

    In order to validate your claims, you need to provide research that supports your claims. There are many things that are natural that are bad for us and there are many things that we do/use that are not natural, but we do so anyway.

    The human is designed by nature to handle both fruits, veggies, buts etc and meats. Nothing unnatural about it and we done it for millennia.

    Beside death corpse or not it tastes great, but that is the reason I only bio organic meats I want that taste.

    Also only reason not to eat meat a lot is the environment it is very inefficient to produce meat and it tasks the environment badly.

  • followed to the exact directions and it simply tasted like watery brocolli and i guess i should have realised that before hand, stick to the potato stock, onions brocolli etc much nicer

  • I use this recipe often and i get a strong flavoured soup. Seems you put too much of the broccoli water in the blender or over cooked it. The brocolli i use is not even the best quality.

  • yeah chino i was careful to not over cook it as i hate when its overdone and i was fairly careful with the water just ended in disappointment, but using the stock and onions etc yes i guess its not a powerful broc taste but just enough with a few other flavours to make it more interesting i guess,

  • The thing I like about Gordon Ramsey is he explains everything in a way that makes sense and it's easy to understand. Too many cooking shows leave you scratching your head. Chef Ramsey cuts through the BS and tells you how to cook things properly. He really has a passion for food and it's great he enjoys sharing his knowledge with all of us.

  • I think he got rid of the stems because he was going for a very dark color. If he kept the stems it would have made the soup a lighter green.

    some of the vibrancy of the colour and clarity of the sheen is lost through film and youtube compression.. when you see it infront of you, it looks a hell of a lot nicer than the typical baby-poop coloured broccoli soups you get with cream, garlic, butter and whatnot in them

  • I had company for a BBQ this weekend and made this for the first time as a fast appetizer. Used feta crumbles (cheap goat cheese easily found in all stores) and it was as beautiful as it was easy and delicious. The soup was a huge hit and very simple to make and delicious.

  • I just made this for my family. I didn't have any goats cheese so I used a sharp cheddar. We ate it with some good crusty bread. As Gordan would say, Fucking Delicious.

  • Haha! I'm a professional chef in training and my chef assigned me with brocolli soup. It was tasteless! I should have seen this video first!

  • I remember an episode of Ramsay's Kitchen Nightmares ("Clubway 41") where Ramsay makes this to show the "chef" that brocolli soup doesn't need a bunch of ingredients (could that be what he's referring to?) and he says something like "My dish has water, and brocolli, and brocolli, and brocolli, and brocolli" to reiterate the fact.
