Professor Dasgupta thank you so much! I am in med. school and am having challenges with my bio. chem class.  You actually explain the material instead of talking down to the students like we are in elementary school or are all ignorant and will never understand. I found a bit of an error: the fatty acid tail is only soluble in non-polar organic solvents. The ester linkage is the hydrophilic, or polar, portion of the molecule that will react with water.
