BSE, Bovine Spongiform Encepholopathy also know as Mad Cow Disease causes CJD, Creutzfeldt Jakob Disease in humans . . .we had a bit of a scare here in the U.S. five years or so ago when a cow or some cows were processed despite indications of possible BSE infection. I'd rather come to Britain and try your stew. (cough)
Small child after the war - poverty times - in Germany... I remember oxtail 'SOUP' as a gourmet meal... lol (1950s)... But the meat has to be browned first I think... Both parents worked and father was home first, I remember he was cutting all veggies that 'big' and consequently I cut things now small and dainty. I remember it was a very 'brown' soup... and I did not like it, nor any other feet/snout/tail/eyes of animals cooked in those days...
I should add though: good for you to revive this simple meal, easy to cook inside an oven (Dutch skillet usually used then, or a pot like yours). 5* good thing for young people to learn and loose any fear of cooking 'stuff'. Cooked at about 375C (medium) you could do that... might be wrong... it's been a while since I was a housewife. All stews are great with added mushrooms. If potatoes peeled, of course, they are great 'baked' right along with the meal. +Paprika :)
okay, I should add for the young people, for a healthy one person meal (one person me only now), it is very healthy to take a bit of meat, like a cut of meat that is meant to be a small 'minute' steak... freeze it just a bit to cut easier into very small strips, brown in 'good' oil, take out, brown onions to golden (all small cut), same with carrots/cabbage/green and red pepper strips etc. (mushrooms) and then stew all with bits of stock, reduce liquid and over rice or mashed potatoes/yum!
What a charming video and such a delicious looking meal. I think people don't put as much care in their meals as you do. It reminds me of the delicious cabbage stew with meatballs that my grandmother can make so deliciously! :-)
cook the meat with some vinegar or wine and it will help dissolve the minerals in the bones and dissolve the cartilage. More healthy and tasty too. Oxtail meat is one of the most delicious "cuts' of beef, but takes a long time to braise. YUM.

I am a pro chef, it is a fab soup and makes great stew BUT Peter, it is actually kind of expensive now. I have no idea why exactly but it is more expensive to buy two oxtails, than say four chicken breasts.
I've had oxtail soup, but never really liked it to be honest. Too spoilt with my sirloin steaks and lamb chops! But yep, got to cut back on the food bills. I'm sure there are still some proper Butchers to be found amongst all the Tescos and Asdas around here to get some OxTail.
You're certainly proving you're capable of more than a 3 min microwave ready meal.
May I suggest 350F, 180C, gas mark 4 for 2 hours cooking time. Cuts of meat that tend to be tough need to be cooked longer, say 3 hours at 325F, 160C, gas mark 3. Or for us oldies, put it in the oven and nod off in your favorite chair. It should be done when you wake up.

May I suggest a small "crock pot?" I think they are easier to deal with during cooking and probably a little safer (removing from oven and all). Give it a try.
